Fried Egg over Beet Greens
This is a super simple breakfast and easy to prepare. It is also a great way to use up those extra beet greens. Beet greens are high in B vitamins, folate, zinc, fiber, iron, calcium, and magnesium so don’t throw them away; make use of them.
Ingredients
1/2 bunch beet greens
1/2 cup chopped broccoli
1/4 medium onion, chopped
1-2 cloves garlic, minced
3 tablespoons olive oil
2-4 large organic eggs
Instructions
Add 1 1/2 tablespoons of oil to skillet over medium heat. Add onions and sauté until translucent. Add broccoli and sauté for another two minutes. Then add the beat greens, sprinkle with salt and pepper, and sauté for a minute or just until the greens wilt. Remove from heat and cover.
Then add the rest of the oil to a non-stick or cast iron skillet over medium heat. Fry 1-2 eggs per person, making sure to fry them so that the yolk doesn't firm up too much. The idea is that when you cut into your egg on top of the beat greens, the yolk will drain into the greens adding more flavor. Divide the greens between two plates and top with the 1-2 fried eggs per person. Sprinkle with salt and pepper and serve immediately.
