Banana Arugula Breakfast Smoothie
This is a very easy and very quick breakfast to make before you dash out the door. You can experiment by adding your favorite seeds to this recipe as well for added protein. You can switch out the kinds of greens you use and the type of non-dairy milk you try. I love the arugula in this smoothie, but spinach works just fine also. This smoothie makes for a quick mid-day snack also.
Ingredients:
2 cups fresh arugula
1 frozen banana
1 tablespoon unsweetened sunflower or almond butter
1 1/2 cups unsweetened almond or coconut milk
Instructions:
Blend all ingredients thoroughly in a high powered blender. Enjoy immediately.
Could you please tell me what brand of non-dairy milks you recommend? It is hard to find ones that do not have thickeners and taste enhancers.
Hi Connie,
You are right. The best thing is to actually make your own milks which is actually quite easy and only requires a powerful blender and a thin strainer or cheese cloth. If you can’t make your own milk due to time constraints, I listed below some alternatives.
You can get a milk base that you just blend with water (addjoi.com). You can also try goodmylk.com for concentrates. Ripple brand found in stores if pretty clean too with only added vitamins. Thrive market Oat Milk has limited ingredients. Whole Foods brand almond milk has all approved ingredients. Calfia Farms homestyle almond milk is a good one too!
Hope this helps….
